Everyone is in for the night, I'm cleaning on the kitchen and Little Man walks in.
This is the child that can not stay up past 8 o'clock. Here it is going on 10pm and he's asking me to make a cake with him. I then ask, tonight?
He can't sleep and seems to think an angel food cake will help.
I give in, OK lets do it.
Before long Sunshine girl wants to know what all the fun is about and joins in.
I'm happy I said yes. What a special memory we made. Sometimes its' OK to bend the rules in my book.

Oven Temp ~ 375°
Preheat oven, Using a mixer beat egg whites with cream of tartar on high speed until foamy. Add 3/4 cup of the sugar, 2 tablespoons at a time, beating constantly until sugar is dissolved* and whites are glossy and stand in soft peaks. Beat in flavorings. Sift together flour, remaining sugar and salt. Sift about 1/2 cup of the flour mixture over whites and gently fold just until flour disappears. Repeat, folding in remaining flour mixture 1/2 cup at a time. Pour into ungreased 10 x 3 3/4-inch Angel Food pan. Gently cut through batter with metal spatula.Bake in preheated oven until top springs back when lightly touched with finger. Invert cake in pan on funnel or bottle neck. Cool completely, about 1 1/2 hours. With narrow spatula or knife, loosen cake from pan and gently shake onto serving plate. Let the cake cool. Add whipped topping and strawberries.

1 1/2 tsp Cream of tartar

Angel Food cake with strawberries and whipped cream is one of my favorites! Looks beautiful. :) How funny that you made that at 10:00 pm! I'll bet it was a very yummy breakfast though.

Glad you posted the recipe as I've been trying to get my hands on an angelfood cake recipe that someone uses and has success with. I'll have to try this one.
Your post about your slump was inspiring the other day. I too get in slumpy times and it helps to hear others experience it as well- brought on by sickness, stress, whatever. I especially liked reading that even when you're feeling that way, you know you are blessed. I have those same thoughts and then get angry at myself that I can't still get out of my gloomy mood. Now I know that it's ok to feel that way and it will all eventually pass.
